Grilled buffalo burgers are delicious served with fire-roasted tomatoes and melted smoked provolone on ciabatta rolls.
Ingredients
Seasoned Burger Mix
1 1/2 lb ground buffalo
1/4 lb pancetta (Italian bacon), minced
1/4 c yellow onion, minced
2 T garlic, minced
1 t crushed red chili flakes
2 t dried oregano
1 t fresh ground black pepper
1/2 T salt
1 1/2 T extra-virgin olive oil
Additional
1 c Divina fire-roasted tomatoes
4 fresh ciabatta rolls *
1/4 lb smoked provolone, sliced
extra-virgin olive oil and balsamic vinegar to dress
2 oz arugula or mesclun salad greens
Steps
Preheat grill.
Mix ground buffalo with remaining ingredients and form into four patties. Grill to med and top with slice of provolone. Divide tomatoes between them, melt cheese slightly & remove from heat. Quickly grill sliced ciabatta rolls and drizzle lightly with olive oil and vinegar.
Serve immediately with greens and olives for garnish.
