Warm waffles make a wonderful holiday treat. Our recipe produces waffles that are crisp on the outside yet light and airy inside. Serve them with an irresistible combination of hot apples, butter, cinnamon, walnuts and maple syrup with a spoonful of creamy mascarpone or whipped cream.

Ingredients
Belgian Waffles
1 3/4 c all-purpose flour
2 t baking powder
2 T sugar
1/4 t salt
2 egg yolks
1 3/4 c whole milk
1/2 c butter, melted
2 egg whites
mascarpone (or butter or whipped cream), for serving
maple syrup (as desired), for serving
Caramelized Apples & Walnuts
3 T butter
1 sweet apple, such as Honeycrisp, cored and sliced thin
2 T brown sugar
1 c walnuts, such as Red Barn
1 t cinnamon
1/3 c maple syrup
pinch salt

Belgian Waffles
In a mixing bowl, combine flour, baking powder, sugar and salt. Beat egg yolks with milk and butter; add all at once to dry mixture. Stir just until completely moistened (will be lumpy). Separately, beat egg whites to stiff peaks, then fold into batter gently, leaving small bits of egg whites visible to add lightness to the waffles. Let rest 5 min. Meanwhile, heat waffle iron. Spoon approx. 1/3 c of batter into iron or as directed by manufacturer (waffle irons vary in size and style); be careful not to overfill. Cook 4-5 min or until waffles are golden and release easily from iron. Serve immediately with Caramelized Apples & Walnuts and mascarpone.
Caramelized Apples & Walnuts
Warm butter over medium heat in nonstick skillet. Add apples, brown sugar, walnuts and cinnamon. Sauté just until apples soften, approx. 2 min. Add syrup and salt and reduce slightly, approx. 1 min more. Serve immediately.
