Recipe from LESLIE’S LUMPIA
Lumpia Cake is a special, savory way to celebrate a birthday, says Leslie Regalado of Leslie’s Lumpia. In this take on cake, pancit, a traditional noodle dish is surrounded by the lumpia, or spring rolls.

Ingredients
1 pkg (12 oz) dried rice noodles
olive oil
1 onion, diced
3 cloves garlic
1 small head cabbage
4 carrots, thinly sliced
¼ c soy sauce (can use salt and pepper instead)
3 boxes Leslie’s frozen lumpia (try Veggie Lumpia and/or plant-based Beefy Lumpia)
Steps
Place the rice noodles in a large bowl and cover with warm water. When soft, drain the noodles and set aside.
To make the pancit, heat olive oil in a wok or large skillet over medium heat. Sauté onions and garlic until soft. Stir in cabbage, carrots and soy sauce, cooking until cabbage begins to soften. Toss in rice noodles and cook until heated thoroughly. Transfer pancit to a round bowl.
At the same time, prepare Leslie’s frozen lumpia either with an air fryer or in the oven, according to package instructions.
To assemble the cake, center the bowl of pancit, then stand the lumpia upright to ring around the bowl. Tie the lumpia in place with a ribbon or string and decorate, if desired.
