How to Enjoy Wild Rice
Full of fiber and fantastic flavor, wild rice makes an excellent side to your favorite protein. Add it to soups, stews, chowders, casseroles, meatloaf and more! Thanks to its nutty flavor and slightly chewy texture, it also makes a hearty breakfast or porridge. Try it with a few simple add-ins, similar to those you would use for oatmeal, like fresh or dried fruits, nuts, milk and sweetener of your choice. You can even add it to baked goods, like muffins!
Wild Rice Pilaf
Langdon Ag cooked wild rice (follow package directions for 4 servings)
1/4 c each yellow onion, carrot, red bell pepper, and celery, diced fine
1 T extra virgin olive oil
1 t minced garlic
1/2 T fresh thyme, chopped
pinch of salt and pepper to taste
Cook wild rice approx. 45 min, or according to package directions. Meanwhile, sauté diced vegetables in olive oil over medium heat approx. 3 min. Add garlic and thyme and cook 1 min more. Season with salt and pepper, to taste. Toss with hot rice and serve.
