Chef Kenny James said it best: “Salads don’t have to be boring,” and this strawberry and arugula salad with toasted pine nuts and cotija cheese is the furthest thing from boring. It’s bursting with flavor, super easy to make and is packed with iron, as well as vitamins A and C. If you’re in need of a new healthy salad, this is it.

Ingredients
4 c arugula
balsamic vinaigrette dressing
12 tri-color cherry tomatoes
¼ c blueberries
½ c feta
¼ c pine nuts, toasted
4 strawberries, thinly sliced
Steps
Clean and dry fresh arugula, then lightly coat with balsamic vinaigrette.
Place arugula in a serving bowl and add the cherry tomatoes, blueberries and feta.
Toast pine nuts, then sprinkle on top.
Add strawberries and balsamic glaze to finish.
