You’ll gobble up this delicious combination of grilled tomatoes, goat cheese, herbs and seasonings, spread on toasted slices of baguette.

Ingredients
2 c mixed small tomatoes (grape, cherry, etc.)
1 t extra virgin olive oil, plus extra for bread slices, cheese mixture and garnish
12 slices fresh baguette
6 oz goat cheese
1 garlic clove, minced
1 T each Italian parsley, fresh chives, fresh basil, chopped
pinch salt, pepper and chile flakes, to taste
several small basil leaves for garnish
Steps
Grill tomatoes (or broil in oven) until blistered and charred in a few places, moving often to cook evenly, approx. 5 min total. Remove from heat and drizzle with olive oil. Set aside. Toast or grill oiled (or buttered) bread slices until crisp, 1-2 min per side. Combine goat cheese with garlic, olive oil, herbs and seasonings. Drizzle over salad. Spread each toast with 1 T of cheese mixture, topping with 3-4 blistered tomatoes and garnishing with basil leaves. Drizzle with oil and more pepper, as desired. Serve immediately.
