Our pimento cheese spread is so versatile and delicious that we like to keep it on hand at all times. In this recipe, we spread it on hot-off-the-grill Market fresh ground burgers on toasty Market Bakery buns. Try the pimento cheese on sandwiches, mixed into pasta, on baked potatoes, or simply as is with crisp vegetable crudité and crackers.

Ingredients
Pimento Spread
1 T shallots, minced fine
2 T Suzie’s mayonnaise
4 oz cream cheese
1 oz parmesan, grated
8 oz medium cheddar or a blend of sharp and medium, grated
3 oz roasted pimento pepper, drained, diced fine (or sub roasted red peppers)
½ t Joey’s hot sauce, to taste
Pinch each of salt and pepper, to taste
Burgers
4 burgers, fresh Market Meat Dept.
4 fresh Market Bakery burger buns, split
4 large jalapeños, washed and grilled
Lettuce, tomato and condiments as desired
Steps
- Add shallot to the processor and mince well.
- Combine cream cheese and mayo in processor and pulse until thoroughly mixed, scraping down sides.
- Pulse in parmesan, then add remaining ingredients and pulse until uniformly combined.
- Transfer to an airtight container and keep refrigerated until ready to use.
- Serve on freshly grilled burgers with toasted buns, top with lettuce, tomatoes, grilled jalapeños and condiments as desired.
