This delicious baked apple crisp is easy to make and delivers all those wonderful flavors of fall that you expect. Yum!

Ingredients
4 apples (Honeycrisp or similar)
1 c gluten-free old-fashioned oats
¼ c packed brown sugar
¼ c butter, softened and 2 T for finish
¼ c pecans, rough chopped
1 t cinnamon, ground
pinch ground nutmeg
pinch salt
ice cream, if desired, when ready to serve
Steps
Preheat oven to 350°. Core apples leaving bottom intact. Do so by using a paring knife to cut away stem and seeds/core, then use small spoon to remove 1.5-inch diameter hollow in center.
Combine the oats, sugar, butter, pecans and seasonings, then pack mixture tightly into each cored apple.
Place apples in baking dish, cover with parchment and foil and bake until apples are slightly tender and filling is bubbling, approx. 30 min. Uncover, drizzle with melted butter and continue cooking until lightly browned. Serve warm with ice cream, as desired.
