Acai Almond Butter Smoothie Bowl

This tasty breakfast bowl comes together in just a few minutes and allows for easy variations to suit your taste. Use your favorite milk (almond, coconut, soy or yogurt), and choose from a wide variety of fruit. We used almond butter, but peanut butter or other nut butters would be just as tasty. There are dozens of granola options to choose from, too, so just go with your favorite.

Ingredients

2 packs frozen Acai berries (sized for smoothies and bowls)
1 c coconut milk (or almond, soy milk, yogurt, etc.)
½ c fruit juice (apple or pineapple work great)
2 c strawberries
1 c raspberries/blueberries/blackberries
2 ripe bananas, plus more for garnish
3 T honey almond butter (or other nut butter)
½ c granola (maple nut and raisin is delicious)
1 T honey, to taste

Steps

Thaw frozen berry packs under hot water for a minute. Add milk, juice, fruit, acai packs, nut butter and honey to blender. Puree until smooth. Pour into a bowl. Top with cut fruit, more berries, granola, more nut butter, if desired, and a drizzle of honey. Serve immediately.
