Ingredients
Citrus Basil Butter
3/4 c butter, softened
1 lemon, zested and juiced
1 navel orange, zested and juiced
1 oz fresh basil, julienned
1/2 t garlic, minced
1/4 t salt
1/4 t pepper, fresh ground
Roasted Salmon
1 1/2 lb salmon fillets, split into 6 oz portions
pinch salt and pepper
2 oz (1/4 c) Citrus Basil Butter

Combine all in a processor bowl, blending briefly just until combined. Taste and adjust with more citrus, salt or pepper, as desired. Chill until ready to use.
Roasted Salmon
Preheat oven to 350º. Place salmon portions onto a parchment-lined sheet pan, seasoning with salt and pepper. Top with butter and bake 13-15 min until flaky in center, basting repeatedly with butter as it cooks. Serve immediately.
