This delicious, gluten-free Apple Loaf will make your house smell amazing once it’s baking. It has a heavenly gooeyness inside as well as a wonderful apple, brown sugar and cinnamon topping. You may not believe it, but this Apple Loaf counts as breakfast food!

Ingredients
For the loaf
1½ c Josie’s Best Gluten-Free The Muffin & More Mix
1 t baking powder
¼ t baking soda
½ t salt
2 t pumpkin pie spice (just cinnamon is fine)
½ c granulated sugar
2 lg (or 3 sm) eggs
1 t vanilla
juice from ½ lemon
½ c oil (olive or avocado recommended)
1 whole apple, cored and grated
For the topping
1 whole apple, cored and thinly sliced
2 T brown sugar
1 t cinnamon
Steps
Preheat oven to 350° and spray a 9”x5” loaf pan with cooking oil.
Mix The Muffin & More, baking powder, baking soda, salt and pumpkin pie spice together. Set aside.
Mix sugar, eggs, vanilla, lemon juice and oil together, whisking well. Add grated apple to the liquid mixture, then add apple-liquid mixture to the dry mixture, mixing just until there are no streaks of flour. Pour batter into loaf pan.
For the topping, toss the sliced apples with the brown sugar and cinnamon, then arrange on top of the loaf.
