N’duja is a delicious spreadable Italian salami. It’s often used in pasta as it melts into a deeply flavorful sauce, or simply spread on toasted artisan bread as an appetizer. We took it a step or two further and built an incredible toasty grilled cheese with it, all seared in duck fat and sandwiched between melty warm cheeses. This insanely good combo had us all instantly craving more after each bite and we’re sure it’ll do the same for you.

Ingredients
- 8 thick slices good artisan bread
- 6 oz Comte cheese or other semi soft cheese, sliced thinly
- 1 lb N’duja salami
- 4 oz Fontina cheese, sliced thinly
- 4 oz pickled red onions or other pickled vegetable
- 2 oz butter
- 2 oz duck fat
- French fries or chips as desired
Steps
- Layer 1.5 oz of Comte on each bottom slice of bread.
- Top cheese with 2 oz of N’duja, spreading evenly. Top each with 1 oz of pickled onions and then 1 oz of fontina, sliced thinly; add top slice of bread.
- In a large skillet or griddle melt 1 oz butter and 1 oz duck fat over medium heat. Gently press two sandwiches into melted butter mix and immediately flip. Press again into butter and grill until toasty and heated, about 2 min. Flip and repeat, heating until warmed through. Remove from the pan and repeat with remaining butter/duck fat and the last two sandwiches. Serve with hot French fries or chips as desired. Also excellent with creamy tapenade or Romesco sauce.
