What’s not to love about ooey-gooey queso fundido? It’s easy, cheesy and delicious! This is a classic offered at Mexican restaurants (sometimes lit on fire) that’s served as an appetizer with lots of chips and salsa. And it’s even better with a cold beer! This recipe is traditionally made with a few melty Mexican cheeses; ours uses a blend of easy-to-find varieties.

Ingredients
Salsa
1 med tomato, chopped small
1 serrano chile or half jalapeño, chopped
1 T fresh oregano
1 T fresh cilantro
¼ t Tajín
pinch salt
1 T lime juice
Queso Fundido
8 oz cheddar cheese, grated
8 oz jack cheese, grated
1 T flour *
4 oz chorizo
½ med yellow onion, chopped
½ c lager
dash hot sauce
tortilla chips
Steps
Salsa
Combine all well, set aside.
Queso Fundido
Toss cheese with flour. Cook chorizo and onion in a cast iron skillet over medium heat until the meat is cooked through and crumbled, approx. 3 min. Remove sausage and onions from skillet. Add lager and bring to a simmer over medium-high heat. Stir in cheeses a little at a time until completely melted. Add chorizo mixture back to pan with a dash of hot sauce. Top with salsa and serve immediately with tortilla chips or warm tortillas.
